Mulching materials

Can you recommend some good mulching materials?

You recommended wood chips (partly broken down, mixed with mushroom manure) and leaves. Would you use sawdust? Do you find certain organic materials that would make poor mulch (pine needles?)

all those items you mentioned make good mulching materials. But I recommend you first compost them in the manner discussed in the videos on creating thermophilic compost. A heap with variety that is allowed to compost first will be partially digested by microbes, easier to apply, and have more plant available nutrients. Yes, I would use sawdust. It's good as a mulch on your garlic, between your winter carrots and around shrubs and trees. Again, don't use it exclusively. Pine needles are fine but be sparing in your vegetable garden as a mulch.
