Jerusalem Artichoke

The Jerusalem artichoke (Helianthus tuberosus) is also known by the names sunroot, wild sunflower or earth apple.

We just tried Jerusalem Artichoke for the first time after seeing them on the shelves last week at Local Harvest Market. They are yummy! We want to try to grow our own.

Can I just buy a bag at Local Harvest Market and store them to plant this spring? And if so, any info on when to plant and best method for storage would be appreciated.
